Okay I know that I'm always saying that something is "the best ever" but this one is ACTUALLY the best ever haha. This recipe is perfect for a fall/winter dinner and its super easy. I think from start to finish it took me about 35 minutes and the dumplings made from scratch only took about 5 minutes. Seriously the easiest recipe ever ever ever.
Even if you're already an expert on made from scratch dumplings, this might change your mind on how you make them because im pretty sure this recipe is 1000x easier than what you've been doing! Talking to my mom I know that she would make the dumplings with canned, refrigerated biscuits, and that was always really good, but I think being able to say you made something from scratch is sooooo much better.
The rest of the ingredients in this soup are super classic ingredients as well, thyme, celery, carrots, onions and couple other things which you'll see in the recipe below :)
HOMEMADE CHICKEN AND DUMPLINGS RECIPE
serves about 6 people, prep time is about 10 minutes, cook time is about 30 minutes.
INGREDIENTS
- 1 and a half sticks of butter
- 1 whole chopped yellow onion
- 1 cup shredded carrots
- 1 cup diced celery
- 3 tablespoons flower
- 16oz heavy cream
- 32oz of chicken stock
- 3 cans shredded chicken or one rotisserie chicken
- 1 tablespoon fresh thyme
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 2 teaspoons freshly cracked black pepper
homemade dumplings
- 2 cups all purpose flower
- 1 tablespoon and 1 teaspoon baking powder
- 1 teaspoon freshly cracked black pepper
- 1 teaspoon salt
- 1 tablespoon fresh thyme
- 3/4 cup of whole milk
- 4 tablespoons butter, melted
INSTRUCTIONS
1. in a large, heavy bottom pot, like a dutch oven, melt butter over medium heat
2. add onion, carrots, celery, cook about 5 minutes and then add garlic and cook one minute longer.
3. add flower and stir to combine, cook one minute, add heavy cream and chicken stock.
4. bring to a boil for about five minutes and then add precooked shredded chicken, thyme, black pepper and salt and allow to simmer while you prep the dumplings.
5. in a large bowl, whisk together flower, baking powder, salt, pepper and thyme. make a well in the middle and pour in the butter and milk.
6. mix well, and add a tablespoon of milk if your batter seems to dry.
7. using a cookie scoop, scoop dough and drop directly into the simmering soup, and make sure to place them all around the pot, not all in the same place.
8. place the lid on your pot and simmer on low for about 10-15 minutes and then check to see if your dumplings are done.
9. serve hot, and enjoy :)
